Yuca Fries
Crispy, starchy yuca fries with a spicy dipping sauce!
Ingredients
1 large yuca root (approximately 2 lbs.)
4 tbsp. Mayonnaise
4 tbsp. Ketchup
4 tsp. Sriracha hot sauce (or more to taste)
5 cups of oil for frying (I like safflower oil)*
Pink Himalayan Sea Salt, to taste
Preparation Method
Line a large plate with paper towels and set aside.
Mix mayo, ketchup, and hot sauce together in a small bowl, set aside.
Peel yuca root and cut off ends.
Cut into 3-4 pieces horizontally.
Cut each piece in half and remove the fibrous stem in the center with a knife.
Cut yuca pieces into 2.5-inch strips. Try to keep thickness consistent for even frying.
In a deep frying pan, heat oil on medium-high to 350 F.
Gently drop the fries into the oil.
Fry until golden brown about 6-7 minutes, stirring occasionally.
Remove fries from the oil and drain on the lined plate.
Sprinkle hot with salt.
Repeat steps 8-11 until all of the fries are cooked.
Serve with dipping sauce.

Recipe Notes
*I use a 10-inch frying pan and fill it half way up with oil.
I keep a thermometer in the oil during the entire process and regulate the flame to keep the temperature consistent.
