Smoothie Bowls

I wanted to get back to my daily smoothies but I felt a bit bored with them. I came across a really pretty photo on Instagram of a smoothie bowl and I was sold! 20+ YouTube videos later, I decided to try it out.

I really enjoy being able to eat my smoothie with a spoon. The toppings are fun and add a different texture. It takes a while to eat and so I feel more satisfied with the bowls rather than a liquid meal. I also simplified my ingredients for the bowls in comparison to the smoothies and this lowered the calories by at least 200. I am also noticing less cravings for sugary sweets because I getting natural, yummy sweetness from the fruit.

Green Oasis

Ingredients

1 frozen banana, cut into 1’ chunks

3 cubes, frozen mango

1/4 cup Califa toasted almond/coconut milk

2 cups frozen spinach (see note)

Toppings:

fresh blueberries

fresh raspberries

unsweetened shredded coconut

chopped pecans

Preparation Method

  1. Add banana, mango, and frozen spinach, in that order.

  2. Add liquid.

  3. Pulse in blender until smooth.

  4. Depending on your blender, you may need to push ingredients down a few times to get everything smooth.

  5. Adding a dash more liquid also helps but try to keep the liquid at a minimum to achieve a thick base.

  6. Add toppings in a decorative pattern. Please refer to the photo or feel free go off script!

  7. Enjoy!


Purple Mystique

Ingredients

1 frozen banana, cut into 1’ chunks

1 cup frozen blueberries

2 cups frozen spinach (see note)

1/4 cup Califa toasted almond/coconut milk

Toppings:

sliced banana

unsweetened shredded coconut

slivered almonds

grain-free granola (vanilla)

Just Peachy

Ingredients

1/2 cup frozen cauliflower

1/4 cup Califa toasted almond/coconut milk

Toppings

kiwi slices

fresh blueberries

cacao nibs

  1. Add banana, mango, peaches, and cauliflower, in that order.

  2. Add liquid.

  3. Pulse in blender until smooth.

  4. Depending on your blender, you may need to push ingredients down a few times to get everything smooth.

  5. Adding a dash more liquid also helps but try to keep the liquid at a minimum to achieve a thick base.

Recipe Notes

Freezing Fresh Spinach

I freeze fresh baby spinach for my smoothies and smoothie bowls. I buy large amounts of it when on sale and I use gallon size freezer bags. Put handfuls of spinach into the bag until full but not packed. Lay the bag on the counter flat and shake to distribute the leaves. Push out all of the air and seal the bag. You can stack these flat bags of spinach in the freezer to save space.

Freezing Ripe Bananas

The first time I tried to freeze bananas, I created a mess. I put sliced bananas in a freezer bag and tossed them in the fridge. When I went to use them, I had to pry them apart because they stuck together. To avoid this, I learned to freeze the pieces on a tray first for about an hour and then add the frozen pieces to a bag. This helps to keep them separated so it’s easier to grab one serving. By the way, one frozen bananas is equal to 4-5 pieces.
